So what does it mean when we say we run Nginx as a reverse proxy in front of Apache?

It just means that the request goes first to Nginx, which is generally faster at executing, and then only gets passed on to Apache (which can be a bit slower at execution) if it needs to be. This helps speed up your site by routing requests to the best-suited software.
